All Hail Kale

Kale – the ugly stepsister of lettuces and cabbages the world round. It’s tough, it’s abnormally leafy and what would you even do with?

But what if I told you about the health benefits of kale? How great it is to incorporate into a healthy lifestyle that doesn’t consist of kale smoothies? Sidebar, I do love a great kale and greens smoothie, but they aren’t for everyone.

Kale – let it be known – is a type of leafy cabbage. It’s grown quite like a cabbage or lettuce species. And it’s healthy for you. Kale is packed with natural vitamins, nutrients and antioxidants that scare carnivores the world over.

For me, I love kale because of the taste. When you braise kale, it becomes rich and feels ‘meaty’ in a sense. It’s also low in calories and high in fiber. Did I mention the fat content? Less than 10g – of saturated fats. The good kind that you need for an overall balanced diet.

For me, kale is high in iron count. As a vegetarian, iron is hard to come by. Kale has a higher iron count per calorie compared with grass fed beef. It’s also filled with antioxidants that help prevent various cancers.

Enough about that.

The type of kale that I enjoy eating is braised kale. Here’s my favorite recipe that I’ve tailored to my own tastes. Please enjoy.


One carrot – peeled

One stalk of celery

One handful of sliced portobello mushrooms

A handful of kale – chopped

A cup of vegetable broth (or any type of broth you’d wish to substitute)

Salt/pepper to taste



Begin by pan searing the salmon. Add a pinch of salt and pepper to taste.

Add vegetable broth and let simmer.

Add chopped vegetables and cover for 5 minutes.

Remove from heat and serve in a serving dish.

Feeds 1-2 people.


Why Honey?



For 2017, I propose that we all start to drink one glass (at least) per day of Honey Water. It’s simple – just mix a half teaspoon of honey into your water glass and drink. Why you may ask?

There are so many health benefits to incorporating honey into our everyday diets. The biggest for me is clear skin. For years, I’ve struggled with adult acne. It’s gross! It’s disgusting. And it made me feel insecure about my face and going out in public.

Hear me out though. Honey is a natural anti-oxidant. This natural product flushes away wastes and contains antibacterial properties will clear skin and acne issues. I am still a bit wary of adding any heavy creams, products to my face – though I may get over that fear one day. In this case, I suggest adding one glass everyday of Honey Water. Mix warm water with honey – and if you’re feeling wild add a slice of lemon. This soothing drink will help you to clear your skin, reduce toxins and open pores. It also is great for weight loss and sore throats.


First blog post

Here we go! 2017 is in full force and that means making resolutions to start the year out right. I actually can’t stand resolutions. Sure I want to lose weight, eat healthier and find love, but those aren’t necessarily realistic. Life happens! Things happen that we can’t control. So I’ve set out to create resolutions (really goals) that I can achieve and follow through with.

First goal of 2017 – blog. It’s the easiest way to express my thoughts (with no one telling me that I am wrong), and hell it’s free. Goal – Blog at least once a week.

Second goal of 2017 – stay active. It’s too easy to say, I am going to the gym every day for the whole year. OR, I’m going to lose 30 pounds by the end of the year. YEAH RIGHT! It’s one thing to say you’re going to get into shape. Then by January 10th, you’re dreading the gym and making excuses to not go to the gym. Goal – Be active for at least 30 minutes every day. Walk, run, gym, yoga, etc.

Third goal of 2017 – eat better. Going out to eat is inevitable. I am not going to turn down a dinner date with a friend (or boyfriend) just because I have need to hit the gym. I’m 30 years old (about to be one year older), and it’s time to make some food changes. No more binging on late night pizzas. Goal – Incorporate more fruits and vegetables into my diet and eliminate junk foods (within moderation).

The worst part about making resolutions is come December and you realize, SHIT, I haven’t accomplished any of my goals. This revelation actually makes me feel terrible about myself. Today, I have made achievable goals that should I accomplish them, I will feel great about myself.
